It’s no joke, my love of Mexican food runs deep. I take taco tuesday quite seriously and would consider eating guac with any meal. It’s a real problem, this addiction of mine. As far as salsa goes — it’s a household staple in our fridge. It’s kind of comical actually, because when I was younger I despised things like cilantro and “chunky” salsa. Funny how your tastes change with age. It wasn’t until we took a trip to Mexico this past winter that I randomly got the idea to start making my own salsa at home.
I literally ordered guacamole, salsa and a plate of tortillas for. every. lunch. Like a small child. What can I say? It’s just so fresh and yummy and makes for the perfect snack. So, once we got home I did a bit of research to see what went into the most authentic, simple and delicious salsa I could make. What I learned was that it only took 4 ingredients (6 if you count salt & olive oil) and about an hour of my time. Like a caveman, I had been chopping everything by hand at this point. Also remember, I have an addiction, so the quantity of tomatoes alone was high, therefore taking me about one hour plus to chop, store and refrigerate but taste wise, it came out perfect every time.
Seeing as I’ve been getting more comfortable in the kitchen lately and whipping up all sorts of healthy snacks requiring lots of chopping (dips, salsas, fillings etc.), it was time for some upgrades. What use to take me one full hour now takes about 5-10mins total with a food processor. It’s been a total game changer and a mystery why we didn’t get one sooner. I guess when making a purchase like this you always wonder if you’ll use it enough to justify the cost, maybe a year ago I would have hesitated but now I love testing out new recipes or creating my own and can’t wait to use this for so many other healthy snack options! (wait and see).

Shopping List:
+ roma tomatoes (6)
+ white onion (1)
+ cilantro (1 bunch)
+ sea salt
+ olive oil
+ lime (3)
+ wash and cut tomatoes in quarters
I like a rough-chop style salsa so cutting the tomatoes before they get pulsed just helps get the consistency I’m looking for.
+ add tomatoes to food processor & pulse X3 times (set aside in bowl)
+ cut onion in half (set aside half for other use) and cut one half into quarters
+ wash cilantro and remove from stem
+ add onion and cilantro to food processor & pulse X3 times or until desired consistency
+ add to bowl with tomatoes & mix together
+ add drizzle of olive oil (to balance acidity)
+ add juice from one/two limes
+ add sea salt to taste
+ store in a glass jar and let rest in fridge for 2 hours
We went with the Cuisinart 8-Cup Food Processor from Best Buy. Not only has it brought me closer to my salsa sooner than ever before, but I love how quick and easy it is to clean. Everything easily disassembles and is ready to clean without hassle.
I used to think that food processors were too big and bulky and complicated and hard to clean but this has been everything BUT. When we aren’t using it, I store it away in a cupboard so we don’t have to see it. Kitchen counter space is prime real estate around here so unless it’s being used only V few appliances are kept out in the open. Luckily the size fits perfect to tuck away. Maybe when we move into a bigger home we will leave it out, but until then!

I set up our Google Home Mini in the kitchen so I could use it for reminders, to make lists and ask for measurements. It’s been a lifesaver more than once!
I’ll typically make extra to store for later in the week. I keep most of our glass jars once we’re done with them for storing items like salsa in the fridge.

I store my salsa in a big glass jar in the fridge and it usually keeps for one week, if it lasts that long!
